Besan Laadu

For my very first post I decided to make something sweet. Besan (chickpea flour) laadu (balls) my personal favorite, because it doesn’t require much ghee as we use in most  Indian sweets. Easy to make with a few ingredients on hand. So here we go..

Ingredients : Besan                 1cup

                    Powdered sugar  1cup

                    Cashew and Raisins cut into small pecies   

                     Ghee         2 – 4 table spoon

                     Cardamon    1 pod crushed

Method:  1. Keep a thick bottom pan on medium-low heat. Dry roast some cashew and raisins. Keep them aside. 2. To the same pan add besan and fry for 5 min or until u get good smell. 3. Then add powdered sugar along with cardamom, mix well with besan. After 2 min take the whole mixture on a plate. Have to keep stiring continously. Besan tends to stick to pan. 4.Then add ghee little by little to the hot mixture. We have to make balls when it is still hot. 5. We don’t need much ghee at all. Just need some , so that it forms round shape. 6. Once the shape is formed allow it to cool for a while,  and its ready to eat.

 Note : Powdered sugar is important, so that besan and sugar have same texture. One can add nuts or leave it. Adding nuts will give little crunch to the soft laadu. We can even subtitute besan with whole wheat flour. I make this version for my 15 month old daughter.
